Beef Heart

The heart is a lean, hardworking muscle; this cut has rich mineral flavor, and dense texture. Beef heart is high in iron and vitamin B12. By rendering on a pan, the outer membrane, or pericardium, can be consumed. The texture of the lean meat is similar to a lean steak, and it has a rich dark red hue.
